Industrial Kitchen Canopies
A canopy has to capture the thermal plume before it escapes into the kitchen. That depends on canopy size relative to the appliance line, overhang, capture height and extract volume, not just on hanging a hood above the range.
Canopies are fabricated in stainless steel with grease filters, drainage and lighting, and connected into a ducting and extract fan system designed as a whole.

- Yes, canopies are fabricated to suit the actual appliance line and the available ceiling height.
- Is make-up air always required?
- Where extract volumes are significant, yes. Without it the kitchen goes negative and capture performance drops.
